Sancocho

Sancocho is without a doubt a Dominican culinary treasure. It is a dish which is normaly spoken prepared for special occasions, the preparation lasts long and it consists of many ingredients, nevertheless, the time necessary to prepare the dish is best spend with friends, drinking a shot of rum or an ice-cold beer. The Sancocho tradicional is made with beef, the Sancocho de Siete Carnes (seven kinds of meat), the luxurious style, therefore with several kinds of meat.

 
Sancocho

Ingredients:

For 6 persons
500 gr ewe-meat
500 gr sausage (pork-meat)
500 gr pork-meat
1 kg beef with bone
A entire chicken of 1 kg
1 kg pork-rib
500 gr bone of a smoked ham
4 half lemons
1 spoon of cut garlic
4 spoons of oil
2 green Spanish peppers cut in cubes
250 gr yucca (maniok) cut in bits
2 large onions
250 gr yam, cut in bits
2 spoons of celery
250 gr yautia (malanga) cut in bits
250 gr potatoes cut in bits
3 green bananas, 2 cut in bits
2 beef-tea cubes
1/4 cup of capers
2 corn-cobs, cut in pieces
1/2 teaspoons oreganopowder
1/2 teaspoons thyme
1/2 teaspoons koreander
2 teaspoons vinegar
2 teaspoons Tabasco sauce

Preparation:

Place the beef in a casserole and add the salt, the herbs, garlic, vinegar, capers, the spices. Stir the whole to divide it evenly. Heat up the oil in a large pan, add the beef, and roll it over a few times. Lid it and wait a few minutes, then roll it over again. Add some spoons of water to the mix, if necessary. Proceed this for 20 minutes. Add the porkmeat and let it simmer for 15 minutes, add water if necessary. Add the rest of the meat to the mix, let it simmer over a low flame, simmer it once in a while
Add 1 liter of water and heat it up till the boiling point. Add the yam and two bananas cut in pieces. Let the whole cook for 10 minutes. Grater the left banana and add it. Now add the remaining ingredients, and add some water if necessary. Stirr it regular to prevent burning. Let it cook till everything is done. Scoop to cups from the bodem, grind the content, and add it again. Let it cook till it thickens.
Add salt to your taste. Serve warm with some pieces of avocado en white rice.
Enjoy your meal.

Mofongo Dominicano

Ingrediënten:

For 2 persons
2 green bananas
3 fried bacon ras
One and a half clove of garlic
salt
Enough oil to deep-fry

Preparation:

Peel the bananas and cut them in to six pieces.
Heat up the oil so we will be able to deep-fry.
Now we will deep-fry the pieces of banana till they are coloured golden, for 3 or 4 minutes
Then we will grind the fried bananas together wit the garlic, add some salt and the bacon rags, when the bacon rags are cooked you have to cut them in to pieces first. To make it a bit gentle, we can add a spoon of olive oil or some butter.
Now stirr the whole to a homogeneous mix, the bacon must blend with the bananas, the garlic has to become invisibly, so the mix will look like a pasta.
It is necessary to keep the mix warm, allthough the stirring, otherwise try it in parts.

Mangú

Ingrediënten:

For 2 persons
6 green bananas
2 spoons of chive
4 kups of water
1/3 cup of oil
salt
2 sugarspoons of vinegar

Preparation:

Cook the bananas in water till they are smooth.
Then grind the bananas.
Join some water in wich the bananas were cooked, to soften the Mangú.
We heat up the oil and add the chive, drawn from the vinegar. Bake the chive palebrown
Add this to the Mangú, sirr it well and serve.
